- 100 g butter, softened
- 125 g sugar
- 50 g ground almonds
- 1 egg
- 1 teaspoon yeast
- The choice spices (cinnamon, ginger, nutmeg, cloves ...)
- Lemon zest, orange or tangerine
- 1 egg yolk mixed with a little water

preparation:


Preheat oven to 200 ° C (thermostat 6-7).

Mix in a large bowl the flour, yeast, sugar and ground almonds.

Add butter and eggs and then work with a fork.

Then knead with your hands (make a "ball"), and season with either: 4 spices, cinnamon / orange, lemon ...

I cut the ball three, and I make 3 different seasonings!

Spread the dough with a rolling pin and cut out shapes with cookie cutters (Christmas trees, moons, stars ......); arrange on a baking sheet lined with parchment paper.

Spread a little egg yolk with cinnamon on the cookies, so they are golden brown, and bake 7-10 min (to monitor).
